Ingredients
  

  • 1 Pound Italian sausage (mild or spicy)
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 medium potatoes, sliced thinly
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup heavy cream
  • 3 cups kale, chopped
  • Salt and pepper to taste
  • Optional garnish grated Parmesan cheese

Instructions
 

  • In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat.
  • Add the Italian sausage to the pot, breaking it into pieces as it browns. Remove and set aside with the bacon.
  • Sauté the onion in the remaining fat until translucent, then add garlic and cook for 1 minute.
  • Add the potatoes, chicken broth, and water. Bring to a boil, then simmer for 10-15 minutes until potatoes are tender.
  • Stir in the sausage, bacon, and kale. Simmer for 5 minutes.
  • Lower the heat and add the heavy cream, stirring until warmed through. Season with salt and pepper.
  • Serve hot, garnished with Parmesan if desired.

Notes

  • For a richer flavor, substitute half-and-half with more heavy cream.
  • Use Yukon Gold potatoes for their creamy texture.
