Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Line a muffin pan with paper liners or spray with nonstick cooking spray.
  • Chop the apples and mix with honey in a bowl, then set aside.
  • In a large bowl, mix together flour, cinnamon, baking powder, baking soda, and salt.
  • In another bowl, whisk the milk, vegetable oil, and beaten egg.
  • Make a well in the dry ingredients and pour in the wet mixture. Stir until just combined.
  • Fold in the apple mixture.
  • Fill muffin cups with batter, about 3/4 full.

Baking

  • Bake in the preheated oven for 20-22 minutes or until a toothpick comes out clean.
  • Let cool in the pan for 5 minutes before transferring to a wire rack.

Store in an airtight container in the fridge for up to 3 days or freeze for up to 6 months.
