For the Truffles

  • 1 cup white chocolate chips Use high-quality brands like Ghirardelli or Guittard for the best flavor and melting consistency.
  • 1/2 cup heavy cream Look for cream with at least 36% fat content for a lush ganache.
  • 1 cup crushed strawberries Fresh, ripe strawberries work best; frozen strawberries can be used if necessary.

Preparation

  • In a saucepan, heat the heavy cream over medium heat until it just starts to simmer, about 3-5 minutes.
  • Remove the saucepan from heat and immediately add the white chocolate chips. Stir continuously until the chocolate is fully melted and the mixture is smooth, about 1-2 minutes.
  • Gently fold in the crushed strawberries until well combined, making sure not to overmix.
  • Transfer the mixture to a bowl, cover it, and refrigerate for about an hour or until it firms up.
  • Using a small cookie scoop or your hands, scoop out small portions of the mixture and roll them into balls.
  • Roll the truffles in additional crushed strawberries or melted chocolate for added sweetness.
  • Place the truffles on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set.

Notes

Store truffles in an airtight container for up to one week. They can also be frozen for up to a month. For a dairy-free option, use dairy-free chocolate and cream alternatives.
