For the Filling

  • 1 package egg roll wrappers Choose fresh for the best flavor.
  • 1 cup cooked chicken, shredded Rotisserie chicken works great!
  • 1 cup cooked and crumbled sausage Choose a spicy variety for extra kick.
  • 1 cup shredded cheese Cheddar or pepper jack for a creamy texture.
  • 1/2 cup chopped green onions Adds freshness.
  • 1/2 cup bell peppers, diced Colorful and flavorful.
  • 2 cloves garlic, minced For that aromatic depth.
  • 1 teaspoon Creole seasoning The heart of the flavor!
  • 1 teaspoon Cajun seasoning To amp up the spice.

Preparation

  • In a large bowl, mix together the shredded chicken, crumbled sausage, shredded cheese, chopped green onions, diced bell peppers, minced garlic, Creole seasoning, and Cajun seasoning until well combined.
  • Lay an egg roll wrapper like a diamond. Place 1-2 tablespoons of the filling in the center. Fold the bottom corner over, tuck in the sides, and roll tightly, sealing with water.
  • Heat oil in a deep frying pan over medium heat (about 350°F).
  • Carefully add egg rolls to the hot oil and fry until golden brown, about 3-4 minutes per side.
  • Remove the egg rolls and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.

Notes

For a crispy texture, spritz with cooking spray before frying. Can be made in advance and stored in the refrigerator for up to 3 days. Bake at 400°F for 20-25 minutes for a healthier option.
