  • 2 tablespoons maple syrup Choose real, pure maple syrup for a subtle sweetness.
  • 1 teaspoon vanilla extract Opt for pure vanilla extract.

Preparation

  • Melt the Dark Chocolate Chips: Place the chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring in between until smooth. Alternatively, use a double boiler.
  • Blend the Ingredients: In a high-speed blender, combine the silken tofu, melted chocolate, maple syrup, vanilla extract, and salt.
  • Blend Until Smooth: Blend the mixture until it’s ultra-smooth and creamy, scraping down the sides to ensure everything is well combined. Add a splash of almond milk if it seems too thick.
  • Adjust Sweetness: Taste your mousse and adjust the sweetness by adding more maple syrup, if desired.
  • Chill and Serve: Spoon the mousse into individual serving dishes or a large bowl. Refrigerate for at least 30 minutes to help it set.

Notes

Store your mousse in an airtight container in the fridge for up to 4 days. This mousse is perfect for prepping a day in advance; it actually tastes better after chilling!
