  • 2 tablespoons fish sauce Look for a high-quality brand for optimal umami flavor.
  • 2 tablespoons soy sauce Opt for low-sodium soy sauce to control the saltiness.
  • 1 tablespoon granulated sugar To balance the tartness; feel free to use coconut sugar for a more authentic touch.
  • 1 tablespoon fresh ginger, grated Fresh ginger emphasizes the dish's brightness.
  • 1 piece red chili, finely sliced Adjust to taste; add more chili if you are a spice lover!
  • 1 bunch fresh cilantro, chopped Fresh herbs are critical for this dish's refreshing aspect.

Preparation

  • Rinse the fish fillets gently under cold water and pat them dry completely using paper towels.
  • In a small bowl, combine the lime juice and zest, minced garlic, fish sauce, soy sauce, granulated sugar, and grated ginger. Mix thoroughly until the sugar dissolves completely.
  • Place the fillets in a shallow dish and pour the marinade evenly over them. Allow them to rest at room temperature for about 15-20 minutes.
  • Transfer the fish and marinade to a steaming dish. Scatter the sliced red chili and half of the chopped cilantro over the top.

Cooking

  • Place the steaming dish in a preheated steamer and steam uncovered for 10-12 minutes until the fish is opaque and flakes easily with a fork.
  • Remove the fish from the steamer and immediately garnish with the remaining cilantro before serving.

Notes

Use fresh ingredients for the best flavor. For meal prep, marinate the fish a few hours in advance for a more intense flavor.
