Ingredients
  

  • 1 Lb ground beef or ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pck taco seasoning (or homemade seasoning)
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chiles
  • 4 cups chicken or beef broth
  • 1 cup tomato sauce
  • Salt and pepper, to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped fresh cilantro
  • Sliced jalapeños
  • Crushed tortilla chips

Instructions
 

  • In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess grease.
    Add diced onion and garlic to the pot and sauté until softened, about 3 minutes.
    Stir in taco seasoning, ensuring the beef mixture is evenly coated.
    Add the diced tomatoes, black beans, kidney beans, corn, green chiles, broth, and tomato sauce. Stir to combine.
    Bring the soup to a boil, then reduce the heat to low. Simmer for 20 minutes to allow the flavors to meld.
    Taste and adjust seasoning with salt and pepper if needed.
    Ladle the soup into bowls and garnish with your favorite toppings. Serve hot and enjoy!

Notes

  • To make it spicier, add a dash of hot sauce or cayenne pepper.
  • For a thicker soup, mash some of the beans before adding them to the pot.
