Ingredients
  

Base Ingredients

  • 2 cups low sodium chicken stock For a rich base—look for organic options if you can!
  • 1/4 cup Rogers Porridge Oats & Healthy Grains Adds heartiness and texture to the dish.
  • 1 onion (diced) Use a sweet onion for a milder flavor or yellow for a more robust kick.
  • 1 medium sweet potato (peeled & cut into 1/2" slices) Choose firm sweet potatoes for the best texture.
  • 2 apples (unpeeled, cored, and sliced into 1/2" slices) Granny Smith for tartness or Honeycrisp for sweetness.
  • 1 lb cooked turkey slices Leftover turkey works perfectly; rotisserie chicken is a good substitute.

Herbs and Spices

  • 2 tbsp fresh thyme leaves Fresh is best, but dried will do in a pinch.
  • 1 tbsp fresh sage leaves (chopped) Fresh herbs elevate the flavor profile.
  • 1/4 tsp salt Adjust to your taste preference.
  • 1/4 tsp pepper Adjust to your taste preference.

Topping Ingredients

  • 1/2 cup Rogers Porridge Oats & Healthy Grains For added crunch.
  • 3 tbsp Rogers Unbleached All-Purpose Flour To help bind the topping.
  • 1/4 cup Parmesan Cheese (grated) For a salty, nutty finish—opt for fresh if you can.
  • 3 tbsp butter (melted) Room temperature butter for easy mixing.
  • 1 tbsp parsley (chopped) A burst of color and freshness to finish it off.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Lightly coat a 9" x 5" loaf pan with cooking spray.

Cooking

  • In a saucepan over medium-high heat, bring the chicken stock, diced onions, and oats to a boil. Once it reaches a boil, reduce the heat and let it simmer for about 5 minutes, until the mixture thickens slightly.
  • Remove stock mixture from heat and stir in the thyme, sage, salt, and pepper.
  • Layer the ingredients: In the prepared pan, arrange layers of sweet potato slices first, followed by the apple slices, and then the turkey.
  • Pour the chicken stock and oat mixture evenly over the layered sweet potatoes, apples, and turkey.
  • In a small bowl, combine the remaining 1/2 cup of oats, flour, Parmesan cheese, and melted butter. Mix until crumbly and sprinkle it evenly over the top of the casserole.
  • Bake covered with foil for 30 minutes. After that, remove the foil and bake for an additional 10-15 minutes until the sweet potatoes and apples are fork-tender, and the topping turns golden brown.
  • Allow it to stand for about 5 minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. This dish is all about texture, so avoid overcooking the sweet potatoes; they should be tender but still hold their shape.
