Summer Rolls with Two Dipping Sauces

Ingredients
  

For the Summer Rolls

  • 6 pieces rice papers (preferably circular) Look for these at your local Asian market.
  • 2 to 3 medium carrots, cut into matchsticks
  • 0.5 pieces cucumber, cut into matchsticks
  • 0.5 pieces bell pepper (yellow, red, or orange), thinly sliced
  • 0.25 pieces red cabbage, thinly sliced
  • 1 cup greens (leafy lettuce, pea shoots, spring salad mix, or microgreens)
  • 8 oz. organic tofu (firm or extra-firm), sliced (optional) Choose firm or extra-firm tofu for easier handling.
  • 1 handful Mint leaves Small handful.
  • 1 bunch Cilantro sprigs Small bunch.
  • 1 handful Basil leaves (regular or Thai) Small handful.

For the Sweet Chili Sauce

  • 0.25 cup unseasoned rice vinegar
  • 2 tablespoons water
  • 2 tablespoons maple syrup
  • 1 tablespoon tamari or soy sauce
  • 1 clove garlic, minced or grated
  • 1 inch knob of ginger, minced or grated
  • 1 teaspoon red pepper flakes
  • 1 piece juice of lime

For the Peanut Sauce

  • 0.25 cup nut butter (peanut or almond butter)
  • 2 tablespoons pure maple syrup
  • 2 tablespoons water
  • 1 tablespoon tamari or soy sauce
  • 1 inch knob of ginger, minced or grated
  • 1 piece juice of lime
  • 1 to 2 tablespoons rice vinegar (optional)
  • 1 teaspoon red pepper flakes (optional)

Instructions
 

Prepare the Dipping Sauces

  • In a medium bowl, combine all the ingredients for the Sweet Chili Sauce. Whisk until well combined and set aside.
  • In another bowl, add the ingredients for the Peanut Sauce and whisk until smooth. Let both sauces sit for about 10-15 minutes.

Soften the Rice Paper

  • Fill a large bowl with warm water, ideally using a shallow dish.
  • Immerse each rice paper in warm water for about 2-3 seconds until pliable, but not fully soft.

Layer and Roll

  • On a clean surface, lay the softened rice paper down and layer with your selected greens, carrots, cucumber, tofu (if using), and fresh herbs.
  • Bring the edge closest to you up and over the filling and tuck it underneath tightly. Roll away from you, folding in the sides at the 2/3 mark.

Serve

  • Place your Summer Rolls on a platter and serve with your choice of Sweet Chili or Peanut Sauce.

Notes

Store leftover rolls in an airtight container lined with damp paper towels to keep them moist—lasts up to 3 days in the fridge. For busy days, prep veggies and sauces in advance.
