Ingredients

  • 1 package (16.5 oz) refrigerated sugar cookie dough (or homemade sugar cookie dough)
  • 8 oz cream cheese, softened
  • cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh kiwi, sliced
  • ½ cup fresh pineapple chunks
  • ¼ cup apricot jelly (for glaze, optional)

Instructions

  • Preheat the oven to 350°F (175°C). Press the sugar cookie dough into a greased 12-inch pizza pan or baking sheet, shaping it into an even circle.
Bake for 10-12 minutes or until lightly golden. Let cool completely.
In a mixing bowl, beat the cream cheese, sugar, and vanilla until smooth. Spread evenly over the cooled cookie crust.
Arrange the fresh fruit on top of the cream cheese layer in a decorative pattern.
Optional: Warm the apricot jelly in the microwave and brush it over the fruit for a glossy finish.
Slice and serve immediately or refrigerate until ready to serve.

Notes

  • Use any seasonal fruits you like, such as raspberries, blackberries, or mandarin oranges.
  • For a healthier option, use low-fat cream cheese and a sugar substitute.
