Ingredients
  

For the crust

  • 1 cup Haferflocken (alte Stärke) Use rolled oats for the best texture. Look for organic varieties.
  • 3/4 cup Weizenmehl All-purpose flour is great, but feel free to substitute with whole wheat or a gluten-free blend.
  • 1/2 cup brauner Zucker oder Kokosnusszucker Brown sugar adds moisture and a molasses-like sweetness.
  • 1 tsp gemahlener Ingwer Freshly grated ginger can elevate the flavor.
  • 1 tsp Zimt Adds warmth and coziness.
  • 1/4 tsp Salz Enhances all the flavors.
  • 1/2 cup ungesalzene Butter, geschmolzen Make sure the butter is at room temperature.
  • 1 tsp Maisstärke oder 2 TL Pfeilwurzpulver Helps to thicken the strawberry filling.

For the filling

  • 2 cups Erdbeeren, klein gehackt Fresh strawberries bring a burst of sweetness.
  • 2 tbsp Zitronensaft oder Orangensaft Brightens up the filling.
  • 1 tbsp brauner Zucker zum Bestreuen Adds a lovely caramelized topping.

Optional toppings

  • 1/2 cup Puderzucker For a fancy finish.
  • 1/2 tsp Vanilleextrakt Gives a fragrant kick.
  • 1 tbsp Milch (pflanzlicher Basis optional) Dairy or non-dairy milk based on your preference.

Instructions
 

Preparation

  • Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit) and line a 20×20 cm (8×8 inch) baking pan with parchment paper.
  • Chop the strawberries into small pieces and set aside.
  • In a large mixing bowl, combine the rolled oats, flours, brown sugar, ground ginger, cinnamon, and salt.
  • Melt the unsalted butter until it’s just warm, then add it to the dry ingredients. Mix until combined, setting aside 1/2 cup of the oat mixture for topping.
  • Press the oat mixture into the bottom of the prepared baking pan evenly.
  • Place the chopped strawberries evenly over the base. Mix cornstarch, lemon juice, and brown sugar in a bowl, then distribute this over the strawberries.
  • Sprinkle the reserved oat mixture evenly over the strawberries, pressing down gently.

Baking

  • Bake for 35-40 minutes, or until the top is golden brown.
  • Remove from the oven and allow to cool in the pan for 15 minutes before lifting out using parchment paper.
  • Let cool completely on a wire rack, then cut into squares and drizzle with powdered sugar icing if desired.

Notes

Keep your bars in an airtight container; best when enjoyed fresh. These bars can also be made ahead of time, and they freeze well for up to three months.
