  • 1 package strawberry Jell-O Use Jell-O brand for the best results
  • 2 cups boiling water For dissolving the Jell-O
  • 1 cup cold water To cool down the mixture
  • 1 can (8 oz) crushed pineapple, drained Del Monte is a recommended brand
  • 1 cup miniature marshmallows For added texture
  • 1 cup whipped cream Homemade is recommended
  • 1 cup fresh sliced strawberries Choose locally sourced if available
  • 1 cup chopped nuts Optional; pecans or walnuts for crunch

Preparation

  • In a large bowl, dissolve the Jell-O in 2 cups boiling water, stirring for about 2-3 minutes until fully dissolved.
  • Mix in 1 cup cold water and stir well to cool down the mixture.
  • Gently fold in the drained crushed pineapple and miniature marshmallows until evenly combined.
  • Chill the mixture in the refrigerator for 30-45 minutes until it starts to set but remains slightly jiggly.
  • Once the mixture is partially set, gently fold in the whipped cream, fresh sliced strawberries, and chopped nuts.
  • Transfer the mixture to a large glass bowl and return to the refrigerator for at least 2-3 hours, or until fully set before serving.

Notes

For the best whip volume, chill your mixing bowl when preparing the whipped cream. The salad can be made a day in advance, and leftovers should be stored in an airtight container in the fridge for 3-4 days.
