Preparation

  • Marinate the steak by combining your choice of seasonings—think lime juice, cumin, chili powder, and garlic—in a resealable bag with the flank steak. Allow it to marinate for at least 30 minutes; longer if you can.
  • Cook the steak by preheating your grill or stovetop skillet to medium-high heat. Sear the marinated steak for about 5-7 minutes on each side, or until it reaches your desired doneness. Let it rest for 5 minutes before slicing.

Assembly

  • In your favorite bowl, layer the cooked rice as the base.
  • Slice the rested steak thinly against the grain and layer it over the rice.
  • Top with black beans, corn, halved cherry tomatoes, and chopped romaine lettuce.
  • Add creaminess with avocado slices, a dollop of salsa, and a scoop of sour cream or Greek yogurt.

Serving

  • Sprinkle with fresh cilantro for garnish. Serve immediately or store in separate containers for meal prep.
