Pasta Ingredients

  • 12 oz pasta (penne or spaghetti, recommended whole wheat) For an extra health boost.
  • 1 lb Italian sausage (mild or spicy) Spicy sausage adds a kick!
  • 1 medium onion, chopped
  • 3 cloves garlic, minced Fresh garlic elevates the flavors.
  • 14 oz canned diced tomatoes Preferably fire-roasted for a smoky flavor.
  • 1 cup chicken broth Can substitute with vegetable broth.
  • 1 tsp Italian seasoning Homemade blend is best!
  • to taste salt and pepper
  • to serve Parmesan cheese, freshly grated The secret ingredient!
  • to garnish Fresh basil Optional but adds a nice touch.

Instructions
 

Preparation

  • In a large skillet over medium heat, add the Italian sausage and brown for about 5-7 minutes, breaking it into smaller pieces. Once cooked through, remove and set aside.
  • In the same skillet, add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the canned diced tomatoes, chicken broth, Italian seasoning, and a pinch of salt and pepper to the skillet. Bring to a simmer and let enhance the flavors for about 5 minutes.
  • Stir in the pasta, cover, and cook for 10-12 minutes or until al dente, stirring occasionally. If the sauce thickens too much, add a little more broth or water.
  • Return the cooked sausage to the skillet and mix well. Let it simmer for an additional 2 minutes.
  • Serve hot, garnished with freshly grated Parmesan cheese and chopped basil if desired.

Notes

Leftovers can be stored in an airtight container for up to 4 days in the fridge. Reheat gently with a splash of broth. This dish can also be made ahead of time; just add the pasta closer to serving time.
