Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until it’s light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until well incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt until well combined.
  • Gradually add the dry mixture into the wet ingredients, mixing gently until just combined.
  • Gently fold in the caramel bits, ensuring they’re evenly distributed throughout the dough.
  • Drop tablespoons of dough onto ungreased baking sheets, ensuring they are spaced about 2 inches apart.
  • Before baking, sprinkle a little sea salt on top of each cookie.

Baking

  • Bake for 10-12 minutes, or until you see golden edges forming. The centers may look slightly underbaked.
  • Let them sit on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. You can also refrigerate the dough for at least 30 minutes before baking for deeper flavor.
