Ingredients
  

Crust

  • 1 cup 1 Tasse Allzweckmehl (1 cup all-purpose flour) Use gluten-free flour blend if needed.
  • 1.75 cups 1 3/4 Tassen zerbröselte Soda-Cracker (1 ¾ cups crushed soda crackers) Use saltine-style crackers.
  • 0.5 cups 1/2 Tasse Zucker (1/2 cup sugar) Brown sugar can be used for a hint of molasses flavor.
  • 0.5 cups 1/2 Tasse geraspelte Kokosnuss (1/2 cup shredded coconut) Toast slightly for extra flavor.
  • 1 teaspoon 1 TL Backpulver (1 teaspoon baking powder) Ensure freshness for best results.
  • 0.75 cups 3/4 Tasse ungesalzene Butter, geschmolzen (3/4 cup unsalted butter, melted) Let cool slightly before mixing.

Filling

  • 1 can 1 Dose Zitronen-Pie-Füllung (21 oz) (1 can lemon pie filling) Choose a quality brand for best flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (about 175°C) and grease an 8x8 inch baking dish.
  • Melt the unsalted butter in a small saucepan or microwave and let it cool slightly.
  • Crush the soda crackers in a zip-top bag using a rolling pin until fine but not powdery.
  • In a large bowl, combine the flour, crushed soda crackers, sugar, shredded coconut, and baking powder.
  • Pour in the melted butter and stir until mixed to form a crumbly dough.
  • Press 3/4 of the crumb mixture evenly into the bottom of the prepared dish.
  • Spread the lemon pie filling on top of the crust evenly.
  • Sprinkle the remaining crumb mixture over the filling and lightly press it down.
  • Bake for about 30 minutes or until golden brown and aromatic.
  • Allow to cool completely before cutting into squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week. Can freeze for up to three months.
