Preparation

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt until blended.
  • In a separate bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the egg, red food coloring, and vanilla extract to the butter-sugar mixture and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  • Cover the bowl and chill the dough in the refrigerator for about 30 minutes.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Dredge each ball in powdered sugar.
  • Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, until the edges are set and the centers are soft.
  • Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week. Freeze dough in balls for longer storage.
