  • 1 large egg To bind all the ingredients together.
  • 1 cup all-purpose flour Provides structure to our bars.
  • 1/2 tsp baking soda A leavening agent to give them a bit of fluff.
  • 1 cup rolled oats For that hearty chewiness we all love.

Preparation

  • Preheat the oven to 350°F (175°C) to ensure the bars bake evenly.
  • Lightly grease a 9×13 baking dish and set aside. Optionally, line it with parchment paper for easier removal.
  • In a large bowl, beat together the granulated sugar, brown sugar, peanut butter, and softened butter until light and fluffy, about 2–3 minutes using an electric mixer.
  • Beat in the egg until fully incorporated.
  • In another bowl, combine the all-purpose flour, baking soda, and rolled oats. Gradually mix this dry mixture into the wet ingredients until just combined.
  • Pour the mixture into the prepared baking dish, spreading it evenly. To prevent sticking, wet your hands with water while pressing.
  • Place the dish in the preheated oven and bake for about 15-18 minutes until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  • Remove from the oven and allow to cool in the pan for about 10 minutes. Lift out using the parchment paper, let cool completely, and cut into bars of your desired size.

Notes

Store these bars in an airtight container to keep them soft and chewy. They last up to 1 week at room temperature or up to 2 weeks in the fridge. These bars can be frozen for up to 3 months. Try adding chocolate chips or other mix-ins for a twist.
