Ingredients
  

For the crust

  • 1 cup peanut butter (creamy or crunchy) Choose a brand you love, preferably natural without added sugar or oils.
  • 1 cup granulated sugar
  • 1 large egg Room temperature for fluffiness.

For the filling

  • 3 packages cream cheese (softened) Use high-quality cream cheese for smoothness.
  • 3/4 cup granulated sugar For the filling.
  • 2 cups heavy whipping cream Opt for heavy for an indulgent texture.
  • 1 package banana cream instant pudding mix
  • 2 medium bananas (sliced) Ripe bananas with spots enhance sweetness.

For garnish

  • 1 package sliced bananas For topping.
  • whipped cream For topping.
  • chopped peanuts For topping.
  • 1/4 cup creamy peanut butter (melted) For drizzling on top.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium mixing bowl, stir together the peanut butter, sugar, and egg until well combined.
  • Press the cookie batter evenly into the bottom and up the sides of a deep dish 9-inch pie pan.
  • Bake for 13-14 minutes or until slightly crisp and no longer shiny. Allow the crust to cool completely.

Make the Filling

  • In a large mixing bowl, add the softened cream cheese and 3/4 cup of granulated sugar. Beat until smooth and creamy.
  • In a separate medium bowl, combine the heavy whipping cream and banana cream instant pudding mix. Whisk until well combined.
  • Fold the pudding mixture into the cream cheese mixture until fully incorporated.

Layer the Bananas

  • Once your crust is cool, place the banana slices in a single layer on top.
  • Spoon the combined filling over the banana slices and smooth it into an even layer.
  • Cover and refrigerate for at least one hour to set.

Serve

  • Top your pie with additional sliced bananas, whipped cream, chopped peanuts, and drizzle with melted peanut butter before serving.

Notes

Store leftovers covered in the fridge for 3-4 days. For extra peanut butter flavor, add more to the filling. Use lemon juice on bananas to prevent browning.
