  • 1/4 cup brown sugar Adds depth and caramel notes to the filling.

  • 1/4 cup maple syrup For drizzling, optional but highly recommended.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt until well mixed.
  • In a separate bowl, whisk together the melted plant-based butter, almond milk, and mashed banana until smooth and creamy.
  • Pour the wet ingredients into the dry ingredients and stir until a soft, slightly sticky dough forms.
  • Lightly flour a clean surface and roll out the dough into a rectangle, approximately 12x15 inches in size.
  • Evenly slather the peanut butter over the dough, covering every corner.
  • Sprinkle the brown sugar and cinnamon over the peanut butter layer, ensuring even distribution.
  • Starting from one of the shorter sides, carefully roll the dough tightly into a log and pinch the seams to seal.
  • Using a sharp knife or dental floss, slice the log into 12 equally-sized rolls and place them in the prepared baking dish.

Baking

  • Pop the dish into the oven and bake for 20-25 minutes, until the rolls are golden brown and cooked through.
  • If desired, drizzle with maple syrup before serving for an added touch of sweetness.

Notes

Store leftover rolls in an airtight container at room temperature for up to 2 days, in the fridge for about a week, or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes from frozen.
