Ingredients
  

For the Crust

  • 2 cups finely crushed honey graham crackers Honey Maid is a fantastic option!
  • 1 tablespoon granulated sugar For a touch of sweetness in the crust.
  • 1/2 cup unsalted butter, melted Brings richness to the crust.

For the Filling

  • 2 blocks cream cheese, room temperature (8 ounces each) Use Philadelphia for that perfect creamy texture.
  • 1 cup confectioners' sugar Sweetness overload!
  • 2 teaspoons vanilla extract Pure vanilla will elevate the flavor; it’s worth it!
  • 3 cups whipped topping, divided Cool Whip is a go-to for lightness.
  • 1 box peach jello mix (3 ounces) Adds flavor and structure.
  • 1 can sliced peaches in fruit juice (15 ounces), drained, diced, divided Del Monte canned peaches are a great choice.

Preparation

  • Line an 8×8-inch baking dish with parchment paper, letting it extend up the sides.
  • In a medium bowl, combine the finely crushed honey graham crackers and granulated sugar. Pour in the melted butter and mix until evenly combined. Press the mixture firmly into the bottom of the prepared dish.
  • In a large bowl, beat the cream cheese, confectioners' sugar, and vanilla extract until creamy—about 2-3 minutes. Fold in 2 cups of whipped topping until fully combined.
  • Divide the cream cheese mixture into two separate bowls. In one bowl, mix in 1/4 cup of peach jello mix and 1 cup of diced peaches, folding gently.
  • Spread the peach mixture over the crust, followed by the plain cream cheese mixture. Smooth it out evenly, then top with the remaining whipped topping.
  • Refrigerate for at least 1 hour or up to overnight to set. Before serving, sprinkle the reserved diced peaches on top.

Notes

Keep your Peach Delights in an airtight container in the refrigerator for up to 5 days or freeze for up to a month. Let it chill longer to help filling set properly. You can customize it with different fruits or flavors depending on the season.
