  • 1 loaf Brioche bread (16 ounces), cubed Make sure your Brioche is fresh for the best texture. Alternatively, challah works beautifully too!
  • 8 large eggs (room temperature, beaten) Room temperature eggs ensure better creaminess in your custard.
  • 2 cups whole milk (room temperature)
  • 1/2 cup heavy whipping cream (room temperature)
  • 3/4 cup light brown sugar, packed For depth of flavor; consider dark brown sugar for richer sweetness.
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt

Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, melted Ensure it’s cooled slightly before mixing in.

Serving Garnishes

  • Confectioners' sugar, for garnish
  • Pure maple syrup, for serving Use high-quality maple syrup for that authentic touch.

Instructions
 

Preparation

  • Spray a 9×13-inch baking dish with nonstick cooking spray. Add the cubed Brioche bread evenly across the dish. Set aside.
  • In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and salt until smooth and fully combined. Pour this mixture over the bread cubes, gently pressing down to ensure each piece is soaked in the custard.
  • Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably, overnight.
  • In a medium bowl, whisk together flour, brown sugar, cinnamon, and kosher salt for the topping. Add melted butter and mix until the mixture becomes crumbly. Cover and refrigerate until ready to bake.

Baking

  • Preheat your oven to 350°F (175°C).
  • Take the casserole out of the refrigerator and sprinkle on the topping evenly. Bake uncovered for 45-55 minutes, or until the top is golden brown and the center is set.
  • Once done, let the casserole rest for about 10 minutes before serving.
  • Dust with confectioners' sugar and drizzle with pure maple syrup to serve.

Notes

Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This casserole is perfect for prepping in advance; take your time with the overnight soak—it only makes it better!
