  • 4 large eggs 4 large eggs Opt for organic or free-range for richer flavor.
  • 1 cup 1 cup granulated sugar Regular granulated sugar works best.
  • 1/2 cup 1/2 cup fresh orange juice Freshly squeezed is key!
  • Zest of 2 Zest of 2 oranges Don’t skip the zest!
  • 1/2 cup 1/2 cup unsalted butter, cubed Make sure it’s at room temperature.

Preparation

  • In a medium saucepan, whisk together the eggs and sugar until smooth and fully incorporated.
  • Stir in the fresh orange juice and zest.
  • Cook this mixture over medium heat, stirring constantly with a wooden spoon until thickened.
  • Remove from heat and strain through a fine sieve to remove any lumps.
  • Stir in the cubed butter until it melts completely and blends into the curd.
  • Allow the curd to cool slightly at room temperature or refrigerate it in an airtight container.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks. Can also be frozen for up to 3 months.
