Instructions
 

Preparation

  • In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a stand mixer, cream together the sugar, butter, and orange zest until light and fluffy (about 3-4 minutes).
  • Add the egg, ricotta cheese, and vanilla extract. Mix until fully combined.
  • Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined.
  • Fold in the mini chocolate chips using a spatula.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for 1-2 hours.

Baking

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Using a 1 tablespoon cookie scoop, drop balls of dough onto the prepared baking sheets, leaving space for spreading.
  • Bake for 13-14 minutes until the cookies are almost set but lightly golden.
  • Cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • To prepare the glaze, whisk together confectioners' sugar and orange juice, then drizzle over the cooled cookies.
