  • 1 pound Italian sausage Choose sweet or spicy; Johnsonville recommended.
  • 1 cup heavy cream For luxurious creaminess; half-and-half can be a lighter option.
  • 1 cup chicken broth Homemade is best; Pacific Foods offers good-quality ready-to-go versions.
  • 1 cup fresh spinach Kale can also be substituted.

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

For Serving

  • Parmesan cheese Freshly grated for the best flavor; Pecorino Romano can be a nice twist.

Preparation

  • In a large pot over medium heat, add the Italian sausage. Crumble it with a spoon and cook until browned, about 5-7 minutes.
  • Add the gnocchi, followed by the heavy cream and chicken broth. Stir and bring to a gentle simmer.
  • Let it simmer and cook until the gnocchi is tender, about 5 minutes. Stir occasionally to prevent sticking!
  • Stir in the spinach and cook until wilted, around 2-3 minutes.
  • Season everything with garlic powder, onion powder, salt, and pepper to taste.
  • Serve hot, topped with freshly grated Parmesan cheese.

Notes

For a vegetarian version, swap Italian sausage for sautéed mushrooms or lentils and use vegetable broth. Store leftovers in an airtight container for up to 3 days, or freeze for a month.
