  • 8 oz mozzarella cheese, sliced Fresh mozzarella will give you that delightful creaminess.
  • 1/4 cup balsamic vinegar Opt for a high-quality balsamic for a richer sauce.
  • 2 tablespoons olive oil Use extra virgin olive oil for its fruity flavor and health benefits.
  • 1 teaspoon garlic powder Fresh minced garlic also works beautifully if you prefer.
  • to taste salt and pepper Season to your liking for the best flavor profile.
  • to garnish fresh basil leaves Adds an aromatic touch.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. You’ll know it’s ready when the oil shimmers slightly.
  • Generously season the 4 chicken breasts with 1 teaspoon of garlic powder, salt, and pepper.

Cooking

  • Add the seasoned chicken to the skillet and sear for about 4-5 minutes on each side until golden brown.
  • Pour the 1/4 cup of balsamic vinegar over the chicken, then layer the halved cherry tomatoes on top.
  • Cover the tomatoes with sliced mozzarella.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature 165°F).

Serving

  • Remove the skillet from the oven and garnish with fresh basil leaves before serving.

Notes

Invest a few extra minutes in searing the chicken well for enhanced flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
