Preparation

  • Heat 1 tbsp olive oil in a large skillet over medium heat until it shimmers.
  • Add 1 lb Italian sausage (casing removed) and break into bite-sized pieces. Cook until browned and crispy, about 5-7 minutes.
  • Stir in 3 cloves minced garlic and ½ tsp red pepper flakes (if using). Cook until fragrant, about 1-2 minutes.
  • Pour in 3 cups chicken broth and 1 cup heavy cream, increase heat to bring to a simmer.
  • Add 12 oz penne pasta, cover the skillet, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
  • Stir in 2 cups chopped spinach until wilted, then mix in ½ cup grated Parmesan cheese and season with salt and pepper to taste.
  • Garnish with freshly chopped parsley or basil before serving.

Notes

This dish is best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days in the refrigerator. For a lighter option, substitute heavy cream with Greek yogurt or use less cheese.
