Ingredients
  

Meat Base

  • 1 lb ground beef or ground sausage Use lean ground beef for a healthier option or sausage for a juicier bite.

Cheese and Dairy

  • 2 packs cream cheese, softened I recommend Philadelphia for its creamy texture. Make sure it's at room temperature for easy mixing.
  • 1 cup sour cream Full-fat sour cream will add richness.
  • 1 cup mayonnaise Use a good quality mayo (like Hellmann's) for the best taste.
  • 1.5 cups shredded cheddar cheese Buy block cheese and shred it yourself for better melting.
  • 1 cup shredded Pepper Jack cheese Adds a beautiful kick and creaminess.

Vegetables and Seasonings

  • 1 can Rotel diced tomatoes with green chilies, drained A must for that zesty flavor.
  • 0.5 cup diced green onions Fresh and crunchy, these add brightness.
  • 0.5 cup diced jalapeños Optional, for extra heat.
  • 1 packet taco seasoning You can make your own for added flavor.
  • 0.5 tsp smoked paprika This gives a depth of flavor that complements the meat.
  • to taste salt and pepper Always taste as you go!

Serving Items

  • tortilla chips or crackers for dipping I prefer sturdy tortilla chips; they hold up beautifully against the creamy dip.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, cook the ground beef or sausage until fully browned, about 7-9 minutes. Drain any excess fat.
  • In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until totally smooth.
  • Stir in the shredded cheddar cheese, Pepper Jack cheese, Rotel, green onions, and jalapeños (if using).
  • Sprinkle in the taco seasoning, smoked paprika, salt, and pepper. Mix everything together.
  • Fold in the cooked ground beef or sausage until fully incorporated.
  • Spread the mixture evenly into a 9x13-inch baking dish.

Baking

  • Bake for 25-30 minutes, or until the top is bubbly and golden.
  • Serve warm with tortilla chips, crackers, or veggie sticks.

Notes

Leftover dip can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in the oven or microwave.
