- 2 boneless, skinless chicken breasts
- Salt and pepper (to taste)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup sun-dried tomatoes (chopped)
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- 8 oz fettuccine or penne pasta
- Fresh basil or parsley (for garnish)
Cook pasta according to package instructions. Drain and set aside.Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through (about 6-7 minutes per side). Remove and slice into strips.In the same skillet, add minced garlic and sauté for 1 minute. Pour in chicken broth to deglaze the pan.Add heavy cream, sun-dried tomatoes, Parmesan cheese, Italian seasoning, and red pepper flakes. Stir and simmer for 5 minutes until the sauce thickens.Add sliced chicken back to the skillet and stir to coat in the sauce.Toss cooked pasta in the sauce until well combined.Garnish with fresh basil or parsley and serve immediately.
