Ingredients
  

For the Bars

  • 1 cup unsalted butter room temperature for easy blending; high-quality brand recommended
  • 1 ¼ cups light brown sugar for a rich caramel flavor
  • ½ cup granulated sugar for sweetness
  • 2 large eggs fresh and organic recommended
  • 1 teaspoon pure vanilla extract real vanilla elevates the dessert
  • 2 cups all-purpose flour substitutable with gluten-free blend
  • 1 cup old-fashioned oats adds chewiness and fiber
  • 1 teaspoon kosher salt to enhance flavor
  • ½ teaspoon baking soda for rise
  • ¼ teaspoon ground cinnamon optional, but adds warmth
  • 1 cup white chocolate chips for sweetness
  • 1 cup semi-sweet chocolate chips for balance

Instructions
 

Preparation

  • In a medium saucepan over medium-low heat, melt the butter, stirring constantly until it becomes chestnut brown and nutty in aroma, about 6-7 minutes. Avoid burning!
  • Add both the brown sugar and granulated sugar to the warm butter, stirring until the mixture is smooth and shiny.
  • Chill the mixture in the refrigerator for 10 minutes to incorporate the ingredients thoroughly.
  • Preheat your oven to 325°F (163°C) and prepare a 9x13-inch baking dish with nonstick cooking spray.
  • Remove the brown butter mixture from the fridge and stir in eggs and vanilla until smooth.
  • Add flour, oats, salt, baking soda, and cinnamon (if using) to the mixture, and mix until just combined.
  • Gently fold in most of the chocolate chips, reserving about 2 tablespoons of each for topping.

Baking

  • Transfer the dough to the prepared pan and press it evenly, then sprinkle the reserved chocolate chips on top.
  • Bake for 35-40 minutes, or until golden brown edges are visible and a toothpick inserted comes out clean.
  • Let cool for a few minutes before cutting and serving.

Notes

Store leftover bars in an airtight container at room temperature for up to 5 days or refrigerate for up to a week. You can also freeze them for up to 3 months.
