Preparation

  • In a large mixing bowl, toss together the cauliflower florets, diced bell pepper, grated carrot, diced cucumber, and thinly sliced red onion.
  • In a separate small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.
  • Pour the dressing over the chopped vegetables and gently toss until everything is evenly coated.
  • Cover the salad and let it marinate in the refrigerator for at least 30 minutes before serving.

Notes
