Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  • In a medium bowl, mix together the all-purpose flour and powdered sugar. Cut in the softened unsalted butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared baking dish.
  • Bake for 15-20 minutes, or until lightly golden brown.

Making the Filling

  • In another bowl, whisk together the eggs, granulated sugar, freshly squeezed lemon juice, lemon zest, and baking powder until well combined.
  • Pour the lemon filling over the baked crust, spreading it evenly.
  • Return to the oven and bake for an additional 20-25 minutes, until set.

Finishing Touches

  • Allow the lemon squares to cool completely in the pan, then dust generously with powdered sugar before cutting into squares.
