  • 1 cup grated Romano cheese Opt for fresh over pre-grated; it melts beautifully.
  • 1 piece lemon (zest only) Make sure to use an organic lemon if you can, as you’ll be using the zest.
  • 1/4 cup fresh lemon juice Freshly squeezed is always best!
  • 2 tablespoons chopped fresh parsley For that vibrant garnish.
  • 1/2 cup chicken broth Low-sodium if you’re watching your salt intake.
  • 1/4 cup olive oil Extra virgin for a richer flavor.
  • 2 tablespoons unsalted butter Room temperature for easy blending.
  • to taste Lemon slices For garnish (Optional but makes for a beautiful presentation!)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). This ensures your chicken will bake perfectly while you prepare the rest.
  • Season the chicken breasts generously with salt and pepper on both sides.
  • Set up your dredging station: Place the flour in a shallow dish, beat the eggs in another dish, and mix the grated Romano cheese and lemon zest in a third dish.
  • Dredge each chicken breast: Coat in flour, dip in the eggs, and press into the cheese and zest mixture.
  • Heat olive oil in a large ovenproof skillet over medium-high heat with unsalted butter until melted.

Cooking

  • Add the breaded chicken to the skillet and cook for 2-3 minutes on each side until golden brown.
  • Pour the chicken broth and lemon juice over the chicken.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  • Remove from the oven and let it rest for a few minutes before serving.

Serving

  • Garnish with freshly chopped parsley and lemon slices before serving hot with your choice of sides.

Notes

Quality Matters: Using fresh, high-quality ingredients makes a noticeable difference. Leftovers can be stored in an airtight container for up to 3 days in the fridge. Reheat gently to avoid overcooking.
