For the Brownies

  • 2 tablespoons frisch gepresster Zitronensaft (Fresh Lemon Juice) Make sure it’s fresh-pressed for the best taste.
  • 1 teaspoon Zitronenextrakt (Lemon Extract) Use pure extract for a more intense taste.
  • 1 teaspoon Vanilleextrakt (Vanilla Extract) Brings a note of warmth and complexity.
  • 2 large Eier (Large Eggs) Room temperature eggs are ideal for better emulsification.
  • 1 large Eigelb (1 Egg Yolk) Cocooning the brownies in tenderness.
  • 1 cup Weizenmehl (All-Purpose Flour) Helps achieve that perfect structure.
  • 1/2 teaspoon Backpulver (Baking Powder) For a bit of lift.
  • 1/4 teaspoon Salz (Salt) Balances flavor.

For the Glaze

  • 1 cup Puderzucker (Confectioners’ Sugar) Adds a sweet finishing touch.
  • 2 tablespoons Zitronensaft oder Wasser (Lemon Juice or Water) Moistens and sweetens the glaze.
  • 1 teaspoon Zitronenschale (Lemon Zest for Glaze) More zing on top!
  • 1 teaspoon Zitronenextrakt (Lemon Extract for Glaze) To reinforce that lemon flavor.

Instructions
 

Prep and Baking

  • Preheat the oven to 175°C and line a 23x23 cm baking pan with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  • Add the lemon zest, eggs, vanilla extract, and lemon extract, mixing until just combined.
  • In a separate bowl, combine the dry ingredients: flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture and stir until just combined, being careful not to overmix.
  • Pour the batter into the prepared baking pan and bake for 22-25 minutes.
  • Allow the brownies to cool, then prepare the glaze by whisking together the confectioners' sugar, lemon juice, lemon zest, and lemon extract.
  • Spread the glaze generously over the cooled brownies and cut into squares.

Notes

These brownies can be stored in an airtight container at room temperature for up to 3 days or in the fridge for about a week. Avoid overmixing to prevent dense brownies.
