Ingredients
  

For the Chicken Marinade

  • 1.5 pounds Chicken (breast or thighs) Thighs are recommended for juiciness.
  • 0.5 cup Honey Use high-quality or local honey for best flavor.
  • 0.25 cup Soy Sauce Low-sodium option recommended.
  • 3 cloves Fresh minced garlic Jarred minced garlic can be used in a pinch.

For the Veggies

  • 3 cups Mixed vegetables (broccoli, bell peppers, carrots) Feel free to use seasonal veggies.

For Cooking

  • 2 tablespoons Olive Oil Extra virgin olive oil is preferable.
  • Salt and Pepper Adjust to taste.

Preparation

  • In a medium-sized bowl, whisk together honey, soy sauce, and minced garlic until well combined.
  • Add chicken pieces to the bowl, ensuring they are well coated. Cover and let it marinate for at least 30 minutes or overnight.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the marinated chicken to the skillet, cooking for about 5-7 minutes on each side until golden brown and internal temperature reaches 165°F.
  • Once the chicken is cooked, toss in the vegetables. Stir-fry for an additional 3-5 minutes until tender yet crunchy.
  • Season with salt and pepper as desired.
  • Transfer to a serving dish and enjoy warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Marinate the chicken a day in advance for deeper flavor. Serve with rice and fresh herbs for an elevated look.
