Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Choose high-quality, organic chicken for the best flavor.
  • ¼ cup honey Local honey can add a unique flavor profile.
  • ¼ cup soy sauce Use low-sodium soy sauce if you’re watching your salt intake.
  • 3 cloves garlic, minced Fresh garlic blooms with immense flavor in this dish.
  • 1 tablespoon olive oil Extra virgin olive oil adds a lovely richness.

For the Vegetables

  • 2 large sweet potatoes, peeled and cubed Nutrient-dense and full of flavor.
  • 2 cups fresh green beans, ends trimmed Snap peas or asparagus can also make a delightful swap.
  • 1 teaspoon paprika Adds depth to the flavors.
  • 1 teaspoon dried thyme Fresh thyme can elevate this dish if you have it.

Seasoning

  • Salt and black pepper, to taste Good quality sea salt can enhance the overall flavor.

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet.
  • In a small bowl, whisk together honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper until well blended.
  • Place the chicken breasts into a resealable bag or bowl, pour half of the marinade over them, seal, and refrigerate for 30 minutes to 2 hours.
  • Drizzle olive oil over the sweet potato cubes and season with salt and pepper, then spread them on the baking sheet and roast for 15 minutes.

Cooking

  • After 15 minutes, remove the baking sheet from the oven and combine green beans with the sweet potatoes.
  • Remove the chicken from the marinade and arrange it on top of the vegetables, pouring the remaining marinade over it.
  • Bake for an additional 20–25 minutes until the chicken is cooked through (internal temperature should reach 165°F).
  • Let the dish rest for about 5 minutes before slicing the chicken, then serve with pan juices drizzled over.

Notes

You can marinate the chicken the night before to save time. For a gluten-free meal, use tamari instead of soy sauce.
