A classic Australian treat made at home! These delicious chocolate biscuits are layered with a creamy filling and coated in rich chocolate, perfect for satisfying your sweet tooth.

Ingredients
  

For the Biscuits:

  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 1 egg
  • 1 tsp vanilla extract

For the Filling:

  • ½ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

For the Coating:

  • 200 g dark chocolate (melted)
  • 1 tbsp coconut oil (optional, for smooth coating)

Instructions
 

  • Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
    In a bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
    Sift in the flour and cocoa powder, and mix until a dough forms.
    Roll out the dough on a floured surface to about 1/4-inch thickness. Cut into rectangular shapes (about 2x1 inches).
    Place the biscuits on the prepared tray and bake for 12-15 minutes. Let them cool completely.
    For the filling, beat butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
    Sandwich two biscuits together with a layer of filling.
    Dip each sandwiched biscuit into melted dark chocolate (mixed with coconut oil for a smoother finish) and place on a wire rack to set.
    Let the chocolate coating harden before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • For a richer flavor, use milk chocolate or a mix of dark and milk chocolate for coating.
