For the Biscuits:
- 2 cups all-purpose flour
- ½ cup cocoa powder
- 1 cup granulated sugar
- ½ cup unsalted butter (softened)
- 1 egg
- 1 tsp vanilla extract
For the Filling:
- ½ cup unsalted butter (softened)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk
For the Coating:
- 200 g dark chocolate (melted)
- 1 tbsp coconut oil (optional, for smooth coating)
Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.In a bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.Sift in the flour and cocoa powder, and mix until a dough forms.Roll out the dough on a floured surface to about 1/4-inch thickness. Cut into rectangular shapes (about 2x1 inches).Place the biscuits on the prepared tray and bake for 12-15 minutes. Let them cool completely.For the filling, beat butter, powdered sugar, vanilla extract, and milk until smooth and creamy.Sandwich two biscuits together with a layer of filling.Dip each sandwiched biscuit into melted dark chocolate (mixed with coconut oil for a smoother finish) and place on a wire rack to set.Let the chocolate coating harden before serving.
