Dough Ingredients

  • 1.5 cups lukewarm water (100°F to 110°F) This helps activate the yeast.
  • 1 tablespoon pure cane sugar Can be substituted with honey or agave.
  • 1 packet instant or active dry yeast (about 2 1/2 teaspoons) Essential for that perfect rise.
  • 3.75 to 4 cups flour All-purpose is the best choice; mixture of all-purpose and whole wheat is also good for added depth.
  • 1 teaspoon sea salt Enhances the flavor.

Poaching Bath & Topping

  • 0.5 cups baking soda For the poaching bath, gives classic pretzel flavor.
  • Olive oil or vegan butter (melted) For brushing, adds flavor and finish.
  • Pretzel salt or any coarse salt for topping For that indispensable crunch.

Instructions
 

Preparation

  • In a large bowl, pour the lukewarm water and stir in the sugar. Sprinkle the yeast over the surface and let sit for 5 to 10 minutes until foamy.
  • Add 2 cups of flour to the yeast mixture and stir until well combined. Add salt and gradually mix in the remaining flour until the dough pulls away from the sides of the bowl.
  • Knead the dough for about 3 minutes until somewhat smooth. Cover it with a kitchen towel and let it rest for 10 minutes to 1 hour.
  • Preheat your oven to 425°F (220°C) and grease a baking sheet with olive oil or line it with parchment paper.

Cooking

  • Roll the dough into a long rope and slice it into 1-inch pieces.
  • In a large pot, bring 2 inches of water to a boil, carefully add baking soda, and poach half the bites for 30 seconds.
  • Use a slotted spoon to transfer them to the prepared baking sheet.
  • Brush the pretzel bites with melted olive oil or vegan butter, then sprinkle with coarse pretzel salt.
  • Bake for 12 to 16 minutes until golden brown.

Serving

  • Serve warm with mustard or cheese dip.
