Dry Ingredients

  • 1 cup whole wheat flour Can substitute with all-purpose flour.
  • 1/4 cup coconut sugar Can substitute with brown sugar.
  • 1 teaspoon baking powder For a light texture.
  • 1/2 teaspoon cinnamon Integral to churro flavor.
  • 1/4 teaspoon salt To enhance flavors.

Wet Ingredients

  • 1/2 cup unsweetened applesauce Acts as a natural binder.
  • 1/4 cup almond milk Any milk variety can be used.
  • 1 teaspoon vanilla extract For a warm, inviting scent.

For Topping

  • to taste melted coconut oil Can use traditional butter if preferred.
  • to taste additional cinnamon and sugar For the classic churro coating.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the whole wheat flour, coconut sugar, baking powder, cinnamon, and salt until well combined.
  • In another bowl, mix the unsweetened applesauce, almond milk, and vanilla extract until fully combined.
  • Gradually stir the wet ingredients into the dry ingredients until just combined.
  • Using a small cookie scoop or your hands, form the dough into bite-sized balls and place them on the prepared baking sheet, spacing them about an inch apart.
  • Brush the tops with melted coconut oil, then sprinkle generously with additional cinnamon and sugar.

Baking

  • Bake for 12-15 minutes, or until golden brown and a toothpick comes out clean.
  • Allow them to cool slightly before serving. Enjoy warm or at room temperature.

Notes

Store leftovers in an airtight container for 2-3 days at room temperature or in the fridge for up to a week. Can be made ahead and refrigerated for up to 24 hours before baking.
