Chipotle Mayonnaise

Burger Ingredients

  • 1 lb lean ground chuck (20% fat) For juiciness and flavor; don't go leaner!
  • 1 tsp lime juice Adds a fresh zing.
  • Salt & pepper Essential for seasoning.
  • 4 slices Havarti cheese Creamy and melts beautifully.
  • 4 pieces brioche buns Add a touch of sweetness.
  • 8 slices bacon (cooked) Because everything is better with bacon!
  • 1 large tomato (sliced) Fresh and juicy.
  • Lettuce For that crisp texture.
  • Ketchup, mustard, pickles Add to your personal taste.

Instructions
 

Prepare the Chipotle Mayonnaise

  • In a small bowl, mix 4 tablespoons of mayonnaise with 1 tablespoon of chipotle powder, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder. Adjust seasoning and set aside for flavors to meld as you prep the burgers.
  • Chef's Tip: Make this mayo up to a day in advance; it only gets better!

Mix Burger Ingredients

  • In a large bowl, combine 1 lb of ground chuck, 1 teaspoon of lime juice, salt, and pepper. Mix gently to avoid overworking the meat—this keeps your burgers tender!
  • Common Mistake: If you handle the meat too much, it can lead to tough burgers.

Shape Patties

  • Divide the mixture into four equal portions and gently shape them into patties about ¾ inch thick. Using your thumb, create a small indentation in the middle of each patty to help them cook evenly.

Grill Time

  • Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates.
  • Grill the patties for 5-6 minutes on one side. Flip and add the slices of Havarti cheese. Grill for an additional 3-4 minutes until the cheese is melted and burgers are cooked to your desired doneness.

Bun Preparation

  • While the burgers are grilling, toast your brioche buns on the grill for 1-2 minutes until golden.

Assemble Your Burgers

  • Spread a generous amount of chipotle mayo on both halves of the buns. Layer the burger patty with bacon, lettuce, tomato, ketchup, mustard, and pickles.

Notes

Leftover patties can last 3-4 days in the refrigerator. Reheat on a skillet for the best results. The chipotle mayo can be made up to two days in advance.
