Ingredients
  

For the Salad

  • 4 cups spring salad mix or your lettuce of choice Ensure greens are fresh for best flavor.
  • 1 cup grape or cherry tomatoes, halved Adds juicy flavor.
  • 1 shallot, thinly sliced For additional flavor.
  • micro greens, optional for garnish Adds visual appeal.
  • 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed Rich in protein.
  • mineral salt and freshly cracked pepper, to taste For seasoning.

For the Lemon Tahini Dressing

  • 4 tablespoons tahini Use a high-quality tahini for best results.
  • 1 large lemon, juiced Freshly squeezed for maximum flavor.
  • 1 dash mineral salt
  • 1 dash garlic salt
  • 1 dash red pepper flakes To taste.
  • 2-3 tablespoons water or lemon juice, as needed to thin the dressing

Instructions
 

Prepare the Tahini Dressing

  • In a small bowl, whisk together tahini, juice of lemon, mineral salt, garlic salt, and red pepper flakes.
  • Gradually add water or more lemon juice until achieving desired consistency.

Assemble the Salad

  • In a large bowl, place the spring salad mix as the base.
  • Add halved cherry tomatoes, sliced shallot, chickpeas, and sprinkle with optional micro greens.

Dress the Salad

  • Drizzle the tahini dressing over the salad and gently toss to combine.

Serve or Store

  • Serve the salad immediately or store dressed salad and dressing separately for meal prep.

Notes

For best freshness, keep salad and dressing separate until serving. Tahini dressing can be made in advance and stored for up to 5 days.
