Ingredients
  

For the Chicken

  • 1 lb Chicken Breasts Use organic or free-range chicken for the best flavor.
  • 2 tablespoons Olive Oil Extra virgin is recommended for robust taste.
  • 2 teaspoons Dried Oregano Use a high-quality brand for intense flavor.
  • Salt and Pepper to taste Freshly ground pepper works wonders.

For the Tzatziki

  • 1 cup Plain Greek Yogurt Choose full-fat for creamier tzatziki; Fage is recommended.
  • 1 Cucumber grated and drained Add a sprinkle of salt to help draw out moisture.
  • 2 cloves Garlic Fresh garlic has the best punch.
  • 1 tablespoon Lemon Juice Freshly squeezed is always better!
  • Fresh Dill or Mint for garnish A sprig will add flavor and beauty.

Preparation

  • Preheat your grill to medium-high heat.
  • In a bowl, mix the olive oil, dried oregano, salt, and pepper.
  • Coat the chicken breasts in the marinade and let soak for at least 15 minutes.

Cooking

  • Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until internal temperature reaches 165°F.
  • While the chicken is grilling, combine the Greek yogurt, grated cucumber, minced garlic, and lemon juice in a bowl to make the tzatziki.
  • Mix the tzatziki until smooth and season with salt to taste.

Serving

  • Plate the grilled chicken with a generous side of tzatziki and garnish with fresh dill or mint.

Notes

Let the grilled chicken rest for 5 minutes before slicing to allow juices to redistribute. Store leftovers in airtight containers.
