Dry Ingredients

  • 1 cup all-purpose flour Sifted for lightness
  • 1 cup unsweetened cocoa powder Dutch-process for its rich flavors
  • 1/2 teaspoon baking powder For a little rise
  • 1/4 teaspoon sea salt To balance the sweetness

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the melted butter, brown sugar, and vanilla until smooth and well blended.
  • Add the eggs, one at a time, mixing well after each addition.
  • In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Carefully fold in the chocolate chips until evenly distributed throughout the dough.
  • Use a spoon or cookie scoop to drop spoonfuls of the dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes, or until the edges are set but the centers look slightly soft.
  • Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to five days. They freeze well too! Let dough rest in the fridge for two days to deepen flavors.
