Ingredients
  

For the Cabbage

  • 1 large head of cabbage Look for a firm, fresh cabbage.

For the Filling

  • 1 lb ground meat (beef, pork, or turkey) Choose lean ground meat for healthier options.
  • 1 cup cooked rice Long-grain or brown rice can be used.
  • 1 medium onion, finely chopped Sweet onions are recommended.
  • to taste salt and pepper Sea salt is a good choice.

For the Sauce

  • 2 cups tomato sauce Use quality sauce or homemade for best results.
  • 1 cup water Helps thin out the sauce.
  • 1 pinch sugar Balances acidity.

Instructions
 

Preparation

  • Remove the core from the cabbage and peel off the leaves.
  • Blanch the leaves in boiling water for about 2-3 minutes until pliable.
  • Drain the leaves in a colander and let them cool.

Making the Filling

  • In a large bowl, combine ground meat, cooked rice, chopped onion, salt, and pepper.
  • Mix until everything is evenly combined.

Rolling the Cabbage

  • Take a cabbage leaf, place a spoonful of filling at the base, fold the sides over, and roll it tightly.
  • Repeat until all filling is used.

Preparing the Sauce

  • In a pot, combine tomato sauce, water, salt, pepper, and sugar. Stir and bring to a simmer.

Cooking the Golubtsi

  • Place some cabbage leaves at the bottom of a large pot to prevent sticking.
  • Arrange the stuffed cabbage rolls seam-side down, then pour the sauce over them.
  • Cover and simmer on low heat for 40-50 minutes until cabbage is tender.

Notes

Store cooked Golubtsi in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently.
