  • 1 onion (chopped) Use a sweet onion for a milder flavor or a yellow onion for a more robust taste.
  • 2 cloves garlic (minced) Fresh garlic is a must for depth of flavor.
  • 2 carrots (diced) They add sweetness and texture; you can substitute with parsnips for a twist.
  • 2 stalks celery (diced) A classic base that enhances the soup’s overall flavor.
  • 2 tablespoons olive oil Use high-quality extra virgin olive oil for flavor.

Preparation

  • In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
  • Add the chopped onion, minced garlic, diced carrots, and celery. Sauté until softened, about 5-7 minutes.
  • Stir in 1 tablespoon of turmeric and 1 cup of lentils, cooking for another minute to toast the spices.
  • Pour in 4 cups of vegetable broth and bring to a boil.
  • Reduce heat and let it simmer for about 25-30 minutes, until lentils are tender.
  • Stir in the juice of 1 lemon and season with salt and pepper to taste.
  • Ladle the soup into warm bowls and garnish with fresh herbs.

Notes

For a creamier texture, use an immersion blender. Store in an airtight container in the fridge for up to 5 days or freeze for 3 months. Adjust spices to your liking.
