  • 2 cups fresh or frozen strawberries, crushed Choose ripe strawberries when in season; if using frozen, ensure they're unsweetened.
  • 2 cups granulated sugar Can substitute with a sweetener of your choice.
  • 1/4 cup lemon juice Fresh lemon juice brightens the flavor and helps stabilize the jam.
  • 1 package fruit pectin (like Sure-Jell) Use the type of pectin that fits your method.
  • 1/4 cup water Used to dissolve the pectin.

Preparation

  • In a large bowl, combine your crushed strawberries and granulated sugar. Let this sit for about 10 minutes to release the natural juices.
  • In a small saucepan, combine the fruit pectin and water. Bring to a boil over medium heat, stirring constantly for about 1 to 2 minutes until clear.
  • Remove the saucepan from heat and mix the pectin into the strawberry mixture, stirring thoroughly.
  • Stir in the lemon juice.
  • Pour the mixture into sterilized jars, filling them to just below the rim, and allow them to sit at room temperature for about 24 hours to set.
  • Store the jars in the freezer for up to a year. Remember to leave space in the jar for expansion.

Notes

For a chunkier jam, stop crushing the strawberries before they become too small. Always sterilize jars to prevent bacteria. After freezing, the jam can be stored for up to a year.
