Ingredients
  

Vegetables

  • 1 bag (16 ounces) coleslaw mix Opt for a fresh mix without preservatives for the best crunch.
  • 1 can (15 ounces) black beans, rinsed and drained Good source of protein; choose organic for quality.
  • 1 ½ cups canned corn kernels, drained Fresh or frozen corn can also be used if preferred.
  • 1 medium jalapeño pepper, seeded and finely diced Adjust the spice level according to your taste.
  • 1 small red bell pepper, seeded and finely diced Adds sweetness and color.
  • 3 whole green onions, finely sliced Provides a fresh, oniony crunch.
  • ¼ cup fresh cilantro, finely chopped A must for that pop of freshness; feel free to substitute with parsley.

Dressing

  • ½ cup sour cream Use full-fat for a creamier, richer taste.
  • ½ cup mayonnaise A combo of both mayo and sour cream creates a luscious dressing.
  • ¼ cup fresh lime juice Fresh is key—bottled juice just doesn’t provide the same zing.
  • 2 tablespoons chipotle sauce from a can of chipotles in adobo For a smoky kick that elevates the dressing.
  • 1 tablespoon taco seasoning You can use a homemade blend or store-bought for convenience.
  • ½ teaspoon ground cumin Adds warm flavor depth.

Toppings

  • 1 bag (9.75 ounces) Chili Cheese Fritos Reserve a handful for topping.

Instructions
 

Preparation

  • In a large bowl, mix together the coleslaw mix, black beans, corn, diced jalapeño, diced red bell pepper, sliced green onions, and cilantro.
  • In a separate bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  • Pour the dressing over the vegetable mixture and add all but a handful of Fritos. Gently stir until everything is well coated.
  • Top the Frito Cowboy Cabbage with the reserved handful of Fritos and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For the freshest texture, avoid cutting the cabbage too finely.
