Ingredients
  

For the Sushi Base

  • 2 cups sushi rice Short grain rice for sticky texture.
  • 1/4 cup rice vinegar Helps season the rice.

For the Crab Mixture

  • 1/2 pound crab meat Premium lump crab recommended, imitation crab works too.
  • 1/2 cup mayonnaise Kewpie adds umami flavor; regular mayo mixed with sesame oil works too.
  • 2 tablespoons sriracha sauce Adjust according to spice tolerance.

For Topping

  • 1/2 cup crunchy shrimp tempura Can be homemade or store-bought.
  • 1/4 cup green onions, chopped For added flavor and crunch.
  • nori sheets Nori sheets For serving.
  • sesame seeds Sesame seeds For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Rinse the sushi rice under cold water until it runs clear, then cook according to package instructions. Once cooked, stir in the rice vinegar.
  • Spread the cooked rice evenly across the bottom of a 9x13 inch baking dish, packing it down gently.
  • In a mixing bowl, combine crab meat, mayonnaise, and sriracha sauce. Spread this mixture evenly over the rice layer.
  • Top with crunchy shrimp tempura.
  • Sprinkle chopped green onions over the shrimp.
  • Bake in the preheated oven for 15-20 minutes until heated through and bubbly.
  • Let cool slightly before serving with nori sheets and garnish with sesame seeds.

Notes

Best enjoyed warm. Leftovers can taste even better the next day! Optional ingredients like diced avocado or veggies can add variety.
