  • 170 g butter Use high-quality unsalted butter for the best flavor. You can substitute with coconut oil for a dairy-free version.
  • 115 g soft brown or demerara sugar Soft brown sugar adds moisture and a rich flavor, but you can use light brown sugar if that’s what you have on hand.
  • 55 g golden syrup A staple in traditional flapjack recipes; light corn syrup can be an alternative.
  • 225 g porridge oats Regular porridge oats create the perfect chewiness. Avoid jumbo oats.
  • 50 g plain flour Helps bind everything together; wholemeal flour can be used for more fiber.
  • 1 pinch salt Balances out the sweetness and enhances flavors.

Preparation

  • Preheat your oven to 180°C (conventional).
  • Grease and line an 8-inch square baking tin with parchment paper.
  • Melt the butter, sugar, and syrup in a large pan over low heat, stirring gently until smooth.
  • Stir in the flour, salt, and oats, mixing well until evenly coated.
  • Press the mixture firmly into the prepared tin.
  • Bake for 25–30 minutes until golden brown.
  • Cool slightly and lightly score the top into bars before cutting completely once cooled.

Notes

Store flapjacks in an airtight container. They stay fresh at room temperature for up to a week.
