  • 1 cup shredded sharp cheddar cheese Use good-quality block cheese for best flavor.
  • 1 cup whole milk Room temperature milk helps in smooth mixing.
  • 2 tablespoons butter Unsalted is preferred.
  • 2 tablespoons all-purpose flour Can be substituted with gluten-free options.
  • 1/2 teaspoon garlic powder Can substitute with fresh minced garlic, use sparingly.
  • 1/2 teaspoon chili powder Adjust for more spice if desired.
  • to taste salt Adjust according to personal preference.

Preparation

  • In a medium saucepan over medium heat, melt the butter for about 1 minute.
  • Stir in the flour and whisk continuously for about 1 minute forming a roux.
  • Gradually whisk in the milk, mixing slowly to avoid lumps, for 2-3 minutes until smooth.
  • Continue stirring until the mixture thickens, about 5-7 minutes, until it coats the back of a spoon.
  • Lower the heat and add the cheddar cheese, garlic powder, chili powder, and salt. Stir until melted.
  • Blend the sauce slightly with an immersion blender for extra smoothness, if desired.
  • Serve warm over tortilla chips or any favorite dish.

Notes

For leftovers, store in an airtight container in the fridge for 3-5 days. Reheat on the stovetop with a splash of milk. Can be customized by adding jalapeƱos or other spices.
